Infrared can shorten the heat-up stage of food drying, but performance depends on the product, slice thickness, initial moisture, airflow and quality target. Savings and drying-time reductions cannot be transferred from an unrelated process. A useful project starts with a controlled validation plan.

Record product variety, dimensions, loading depth, initial moisture, target moisture or water activity, colour, texture and acceptable temperature. The endpoint should be measured with an agreed method rather than judged only by time or touch.
Washing, slicing, blanching and surface water can change drying behaviour. Keep slice thickness and tray loading consistent during trials. Thick piles or overlapping pieces create shadowing and restrict vapour removal, so the lamp setting cannot compensate for poor loading practice.

Infrared supplies evaporation energy, while moving air removes the humid boundary layer. Too little exhaust slows drying; excessive cold air can cool the product unevenly. Consider staged power and airflow as the product becomes drier and more temperature-sensitive.

Product temperature and dryness do not by themselves prove microbial safety, nutrient retention or shelf life. Those outcomes require appropriate laboratory methods and food-safety review. Use cleanable construction and validate the complete process with qualified personnel.
